                                 The saffron risotto from Italian Massimiliano Alajmo,

                                      the youngest ever chef with three Michelin stars,
                              has undergone 20 years of continuous reinterpretations,

                                       with variations every time the menu changes.

                              The current version, which Protagonist deconstructed, is

                                       served with beetroot sorbet and eel gremolada

                  together with his brother Raffaele he has developed a cuisine like no other. “Every ingredient has its own soul,
                  which pulsates at the rhythm of the natural cycles,” he explains. Le Calandre Restaurant is in northeast Italy, in Sarmeola di Rubano, Padua province (alajmo.it).
